Our Omakase course consists of 12 dishes including Wagyu beef, Sushi, Sashimi, Grilled dish, Tempura, and Rice cooked in a special Copper Hagama Pot. The soup is the heart of Japanese Cuisine. It is the dish that tests the skill of the chef. At our restaurant, we use Kombu from Hokkaido to prepared the dashi broth and Dried bonito from Kagoshima Prefecture freshly shaved in front of the customer for each order. Please enjoy the flavor and aroma.

The dishes we use in our restaurant are produced and commissioned by traditional potters all over Japan.

COOKING UTENSIL

TEMPURA DEEP FRYING POT

We have commissioned the last gunmetal pot production studio in Japan to manufacture it. Gunmetal, an alloy of copper and tin, has high thermal conductivity and high heat storage, making it the best pot that perfectly matches the characteristics of tempura.

 

COPPER HAGAMA POT

The copper Hagama, which was made by a master craftsman in Kyoto, has high heat conductivity, making it possible to cook in a short time with a small amount of water. As a result, the rice will have a luster, firmness, fragrance, and sweetness that you have never experienced before.
